Simple & foolproof potatoes:
2-3 large russet potatoes peeled rinsed and blotted dry,
dried chopped onions,
salt & pepper
garlic powder
1 cup of mixture of heavy cream & 1/2+1/2

Directions:
Mix the cream & 1/2+1/2 I use a 60/40 mix 1 cup, spray a 8x4x2.5 disposable loaf pan with non stick spray, thinly slice the potatoes on a mandolin, put just enough cream mix to cover the bottom of loaf pan and layer overlapping potato slices to just shy of half way up & spread 1 tablespoon + dried chopped onion, salt + pepper 1/2 teaspoon garlic powder and spread 1tablespoon finely grated Parmesan on top. Start second layer/overlapping of potatoes to 1/2" of top of pan, salt &pepper, pour cream mix over top shaking pan to almost fully cover potatoes, Wrap in plastic wrap then in aluminum foil and poke holes through both. Place in preheated 350* oven on baking pan for 1 1/2 hour. Test with tooth pick there should be no resistance Remove from oven and carefully (Hot) peel back foil & plastic wrap and put back in 400* oven until lightly browned and bubbly approximately 15 minutes. Take out of oven and let sit for 15 minutes to let potatoes absorb cream mix.

You can use any size pan but not less than 2.5" deep and never fill to top due to boil over and just adjust amounts accordingly to pan. Also by simply adding cheese you'll have Au gratin style just add cheese at first level (shredded mix cheese do best) you don't need much add more on top after it comes out of oven before browning
