1 c. sugar
6 tbsp. flour
2 tbsp. cornstarch
½ tsp. salt
3 c. milk
2 eggs, beaten
2 tbsp. margarine
2 tsp. vanilla
VARIATIONS:
Chocolate - increase sugar to 1½ c. and add 3 tbsp. cocoa.
Butterscotch - Substitute 1½ c. dark brown sugar. Add 2 tbsp. more butter at the end.
Pineapple - Use 8 oz. can crushed pineapple. Add juice for part of milk. Stir in drained pineapple after pudding is cooked.
MERINGUE (8" pie):
2 egg whites, room temperature
¼ tsp. cream of tartar
⅛ tsp. salt
¼ tsp. vanilla
¼ c. sugar
MERINGUE (9" pie):
3 egg whites
¼ tsp. cream of tartar
¼ tsp. salt
½ tsp. vanilla
6 tbsp. sugar

Mix filling ingredients. Gradually add milk and mix until free of lumps. Add eggs. Cook until thick. Add margarine and vanilla. Pour warm pudding into baked pie shell. Top with meringue and bake or cool the pie and top with Cool Whip. For meringue, beat egg whites until foamy. Add sugar gradually. Beat until stiff peaks and sugar is dissolved. Pile on pie, spread and seal to crust. Bake 12-15 minutes at 350º until golden brown. Cool away from all drafts.
