Dressing:

First make the dressing and let stand for several minutes before you pour it on the vegetables. This dressing recipe will cover about 2 lbs of vegetables, so only use as much as you need for your salad and store the rest in the fridge for up to a week.

In a jar or salad dressing bottle, combine:

1 tsp. dijon mustard
2 tbsp. lemon juice
2 tbsp. vinegar of your choice (I often use apple cider vinegar or balsamic vinegar)
1 tsp. salt
1/2 tsp. black pepper
1 tsp. each of basil, oregano and parsley
1 tsp. garlic or onion powder

Shake vigorously and let stand.

Vegetables: In a large bowl, toss the following vegetables with some dressing. According to the amounts specified on your food plan, combine: cucumber, tomatoes, onion (sweet or purple) and peppers.

Fat: According to the amounts specified on your food plan, add an appropriate amount of the oil of your choice (I use olive or avocado oil). If you are allowed olives as part of your food plan, use some as part of your fat.

Protein: Add feta cheese as your protein, as specified in your food plan.

Starch: If you have starch as part of your food plan, consider adding chick peas or another starch that you think might taste good in Greek salad (leftover rice is another possibility).

Toss salad and serve.

This is my favorite travel meal. It keeps really well, doesn’t need to be heated, and is quick to prepare (especially if the dressing has been made in advance and stored in the fridge).
