2 large butternut squashes
3 bunches leeks
1 bulb of garlic (several cloves)
2 ½ - 3 cartons of organic chicken broth
4 Apples (Fuji)
Juice of 2 oranges
1 tsp. orange zest (or to taste)
Salt & pepper to taste
1 tsp. Cinnamon (or to taste)
½ stick butter
2-3 tbsp. olive oil

Wash butternut squash cut into quarters, spoon out seeds, steam for 45 minutes and let cool.

Wash leeks cut into thin slices, press or chop several cloves of garlic and saute in olive oil and butter.

Heat chicken broth in soup pan. Add butternut squash (peel skin, cut into chunks), apples (core, peel skin, cut into wedges), leek/garlic saute, salt, pepper, cinnamon, juice. Bring to a boil and simmer 1-2 hours and puree with hand-held blender.
