1 lbs. chicken breast, cut into strips
2 tbsp. oil
4 cups vegetables (broccoli florets, pepper strips, and sliced water chestnuts)
1½ cups chicken broth
3 tbsp. soy sauce
2 tbsp. cornstarch
2 tsp. brown sugar
1 tsp. garlic powder
¾ tsp. ground ginger
1½ cups rice

Directions:

1. Stir-fry chicken in hot oil in large skillet until browned.
2. Add broccoli, peppers, and water chestnuts. Stir-fry until crisp and tender.
3. Mix broth, soy sauce, cornstarch, sugar, garlic powder, and ginger. Add to skillet. Bring to boil and let boil for one minute.
4. Meanwhile, prepare rice as directed on package.
5. Serve chicken and vegetables over rice.
