1½ - 2 BBQ’d chickens, pulled apart
1 package (16 oz.) frozen mixed vegetables
1-2 cans cream of chicken soup
⅔ cup sour cream
1 large onion, diced
1 tsp. salt
½ tsp. pepper
Shredded cheese

Directions:
Directions:
1. Place vegetables, cheese, soup, sour cream, onion, salt, and pepper in large mixing bowl.
2. Stir ingredients to combine and mix well.
3. Spray 9x13-inch casserole dish with cooking spray.
4. Spread vegetables in casserole.
5. Melt butter in large pyrex measuring cup.
6. Stir to combine.
7. Sprinkle cracker crumbs over top of casserole.
8. Bake at 350° for about 45-60 minutes or until vegetables are cooked through.
