Baked Ziti Recipe

1 lb Fresh or dried Ziti Pasta (rigatoni will also work)
Kosher salt
Tomato Sauce, (recipe follows)
1 lb Mozzarella, ½ cubed, ½ grated
¾ C freshly grated Parmesan, divided
½ tsp freshly ground black Pepper
Pinch red pepper flakes

For the Sauce:
2 Tbsp extra-virgin Olive Oil
6 sweet or spicy Italian sausages, casing removed and crumbled
1 medium onion
3 cloves garlic, chopped
2 Cans diced tomatoes
1 sm Can Tomato sauce
Sprig each fresh basil, oregano and thyme, chopped (you can use dried 1 tsp each)
2 tsp Kosher salt
Freshly ground black pepper

- Preheat oven to 400 Degrees F
- Bring a large pot of water to a boil. Salt Generously, and boil the pasta until al dente, tender but slightly firm. Drain.
- Toss the cooked pasta with the tomato sauce (use as much as you need you may have some left over) the cubed Mozzarella, half the parmesan cheese, black pepper, and red pepper flakes.
- Transfer the pasta to a greased 9 x 13” baking dish. Cover the top of the pasta with the remaining Mozzarella, and Parmesan cheese.
- Bake until lightly browned and hot, about 30 minutes. Serve immediately.

For the Sauce:
- Heat the oil in a medium pan over medium-high heat. Cook the sausage until beginning to brown, about 3 minutes.
- Add the onion and garlic, stirring, until lightly brown, about 3 minutes more.
- Add the tomato’s, tomato sauce and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
- Remove and discard the herb sprigs. Stir in the salt and season with pepper, to taste.

This recipe was Sopranos inspired, everyone was always raving about Carmela's Baked Ziti. I didn't know what Ziti was so I googled it found 3 or 4 recipes combined them to make one and this is the result. I had trouble finding Ziti the first time I made it so I used rigatoni noodles. It's great if you're feeding a big crowd.
