2 to 3 pounds spaghetti squash
1 small zucchini, chopped
2 medium onions, chopped
1 to 2 cloves garlic, minced
8 ounces mushrooms, chopped
1 (16 ounce) can diced tomatoes
salt and pepper to taste
non-stick cooking spray

Directions:
Directions:
Preheat oven to 350º.

Cut squash in half and place face down in microwave-safe dish. Microwave 15 to 20 minutes or until soft. Remove seeds. Scrape out flesh with a fork making spaghetti noodles. Set aside.

Sauté onions and garlic in frying pan sprayed with non-stick spray. Add zucchini, then mushrooms, cooking until vegetables are soft. Add diced tomatoes. Cook to blend flavors.

Coat an individual baking dish with non-stick cooking spray. Measure out food plan portion of starch from the squash and place in dish. Next measure vegetable portion and top squash with it.

Bake at 350º 10 to 15 minutes or microwave using casserole setting.
