Ingredients: 1 lb. beef top round 1 beef bouillon cube ⅓ c. boiling water ¼ c. soy sauce 1 tbsp. cornstarch 2 tbsp. cooking oil 1 tsp. grated gingerroot 6 green onions, bias cut into 1" length ½ c. shredded carrot 1 large green pepper, cut in narrow strips ½ c. sliced celery 2 tomatoes cut in wedges

Directions:Partially freeze beef; slice across the grain into bite size strips. Dissolve bouillon in water. Blend soy sauce into cornstarch; stir in bouillon. Set aside. Preheat wok or large skillet over high heat; add cooking oil. Stir fry gingerroot in hot oil 30 seconds. Add green onions and carrot; stir fry 2 minutes. Remove green onions and carrot. Add green pepper and celery; stir fry 2-3 minutes. Remove green pepper and celery. Add more oil if necessary. Add half the beef to hot wok or skillet; stir 2-3 minutes until browned. Remove beef. Stir fry remaining beef 2-3 minutes. Return all meat to wok or skillet. Stir soy sauce into beef. Cook and stir until thickened and bubbly. Stir in green onions, carrot, green pepper, celery and tomatoes; cover and cook for 1 minute. Serve at once over rice. 4 servings. |
