2 Cornish Hens (12 to 16 oz)
6 oz white & wild rice or 2 boxes of wild rice long grain mix
2 Tbsp onions, chopped
1 stalk of celery, chopped
2 Tbsp minced garlic
1 can cream of mushroom soup, not mixed with water
4 oz mushroom stems and pieces, drained
2 c water
3 Tbsp I Can't Believe It's Not Bouillon - Chicken
2 Tbsp butter
2 Tbsp honey
salt & pepper

Directions:
Heat oven to 375 degrees. Spray a 13" x 9" glass baking dish with oil.
Using kitchen shears cut the game hens in half lengthwise through the breastbone.
I the baking dish mix the rice, onion, garlic, celery, and mushrooms.
Heat the water and dissolve the bullion; stir and mix with the cram of mushroom soup. Pour this mixture over the rice.
Dot the rice mixture with the butter.
Place the seasoned game hens on top cut side down over the rice mixture.
Brush the hens with 1 tablespoon of honey.
Cover with foil ad bake at 375 degrees for 45 minutes.
Uncover; brush with remaining honey.
Bake uncovered for 30 minutes or until tender and crown.
