1 lb. 93% lean ground beef
1 c. matchstick carrots, chopped
1 c. chopped onion
4 cloves garlic, minced
¼ c. tomato paste
1 c. beef stock
2 tsp. corn starch
2 tsp. Worchestershire sauce
½ tsp. ground pepper
¾ c. frozen green peas
¾ c. frozen corn
3 c. mashed potatoes - leftover or packaged such as Simply Potatoes
½ tsp. paprika
Directions:
Directions:
1. Preheat oven to 400º.
2. Brown beef in a large skillet, stirring to crumble. Add carrot, onion, and garlic to pan and cook 2 mins.
3. Stir in tomato paste and cook one minute.
4. Combine ¼ c. stock and cornstarch in a small bowl until smooth. Add to pan along with ¾ c. stock, Worchestershire, pepper and salt. Stir to combine.
5. Stir in peas and corn and cook until frozen vegetables are heated through and mixture begins to thicken.
6. Place beef mixture in a 2 quart baking dish. Spread mashed potatoes evenly on top. Sprinkle paprika on top.
7. Bake for 10 mins until heated through and top begins to lightly brown.

An Avery favorite. This is a recipe that I think is too much trouble for just four servings, so we double it. Also, feel free to add shredded cheese either under or on top of the mashed potatoes.
