1½ lbs, small red potatoes
3 T. olive oil
coarse salt and pepper

1. In a large pot, cover potates with salty water and bring to boil. Turn down heat and simmer until just tender, about 15 mins. Drain.
2. Spray a rimmed baking sheet with cooking oil. Spread potatoes on rimmed baking sheet to cool. Preheat oven to 450º.
3. When potatoes are cool enough to handle and oven is hot, lightly crush the potatoes with the heel of your hand.
4. Place olive oil in a small bowl and use a basting brush to lightly coat each potato with oil. Sprinkle with coarse salt and pepper.
5. Roast until golden brown, about 35 mins.

Feel free to add garlic or onion powder to olive oil. I often add herbs de provence to my sprinkling ingredients.
