Rhubarb Custard Pie Recipe

3 eggs
2 Tbl milk

2 c. sugar
4 TBL flour
3/4 tsp nutmeg

4 c rhubarb sliced (extra rhubarb won't hurt!)

1 TBL butter

Pie crust & extra crust for lattice top

Directions:

Bake 400º for 50-60 minutes. Don't let crust get too dark.

Lay pie crust in pie pans

Mix sugar, flour & nutmeg & set aside.
Beat eggs slightly
Add milk
Mix together well & stir in dry ingredients

Stir in rhubarb

Pour in 1-2 pie pans (I always make 2 thinner ones)
Dot with butter

If you have extra crust it is good to make a lattice top. I usually don't, but Granny ALWAYS did.

I've eaten this pie my whole life. It is easy to make - in off seasons you can buy frozen rhubarb, add the custard items, and wow your friends. Stacy made this for her classmates at college! I think Annabel won a pie contest at the OR State Fair with this recipe, it is absolutely delicious!

Honestly, one person could eat a whole pie - it is that delicious!
