1-1 12 lb Fresh broccoli
1/2 lb Butter
1 cup Flour
1 qt Chicken Broth
1 qt Half and Half
1 tsp Salt
1/4 tsp White pepper
2 cups Velvetta Cheese

Directions:
Directions:
Clean, peel, and stem broccoli. Cut into 1/2" pieces. Steam in 1/2 cup water until tender, do not drain. Set aside. Melt butter over medium heat, add flour to make a roux. Copok for 2 to 4 minutes, add chicken stock, stirring with a wire whip, and bring to a boil. Turn heat to low, add broccoli, half and half, salt, pepper and cheese. Heat, but do not boil. (I usually add the broccoli last).
