9 whole eggs
5 c flour
3 half egg shells of water

Directions:

Mix. Roll out dough, round and thin. Let dry, but not too dry or it will break and crumble – or it will stick and be doughy if not dry enough. Roll like a jelly roll and cut with knife as wide as you want. Dry.

FAMILY STORY - DRYING EGG NOODLES

Stan (Skip) Miller worked for Grandpa Hopp in construction during his college years. Sometimes when he and Grandpa Henry would come home from work for lunch, Grandma Lydia had made noodles in the morning. She laid out all of the noodles on a clean sheet on her bed to dry. They would stay there until just before she went to bed, and then she put the noodles in paper bags. They finished drying in the bags.
