1 (1 lb) package dried lentils
1 lb good smoked German sausage, finely cut
1 large onion, chopped
2 stalks celery, chopped
2 c sour cream
2 medium potatoes, peeled and diced
¼ c apple cider vinegar
1½ quarts water

Directions:
Directions:
Clean lentils well. Place in large soup kettle. Add 1½ qts water. Salt and pepper to taste. Add onions, celery, potatoes, sausage. Bring to a boil, then simmer a couple of hours until lentils are cooked. A little water may have to be added if it is too thick. Stir often as soup may scorch. Remove from burner. Stir in sour cream. Add the vinegar and more sour cream just before serving.

Mom gave this recipe to me soon after Bruce and I were married. It has always been one of my favorites. Of course, Mom used real cream. I have adapted the recipe using lite sour cream. I put the vinegar on the table as Bruce loves more. It is never sour enough for him; he also likes a lot of black pepper.
