3 - 5 meaty beef soup bones
Onion
Celery
Carrots
Potatoes, cut up
Vegetable juice
Tomato juice or canned tomatoes
Cabbage, chopped
Other vegetables (optional)
Seasoning
Rice (optional)

Directions:
Directions:
In large soup kettle place 3 to 5 lbs meaty beef soup bones. Bring to a boil; then simmer several hours. Salt to taste. Let broth sit overnight in a cool place or fridge. Skim off fat. Remove bones. Cut up meat and return to soup pot. Add vegetables. Add seasoning as desired. Simmer soup for several hours. Lydia made this good and hearty vegetable soup, served with fresh baked bread, to feed a family of five kids.
