1/2 cucumber, peeled, seeded and finely chopped
1/2 teaspoon salt. Let stand in sieve (in blender) 1 hour. Rinse with cool water, pat dry.

Mix together:
1 cup plain low-fat yogurt
2 teaspoon Dijon mustard
1 scallion, finely chopped
1 tablespoon chopped dill or mint
freshly ground black pepper

4 skinless salmon fillets, about 6 oz each
2 teaspoon olive oil
1 tablespoon fresh lemon juice

Fry in pan 8 to 10 minutes. Sprinkle with lemon juice. Put on plate and put sauce on top. Serve hot.
