1 cup water chestnuts minced
3 Tablespoon chopped onion
2 boneless chicken breasts
2/3 cup mushrooms
1 teaspoon minced garlic

Stir fry sauce
2 Tablespoons brown sugar
2Tablespoon soy sauce
1/2 teaspoon rice vinegar

Special sauce
1/4 cup sugar
2 Tablespoons soy sauce
2 Tablespoons katsup
1/8 teaspoon sesame oil
2 teaspoons water
2 Tablespoons rice wine vinegar
1 Tablespoons lemon juice
1-2 teaspoons each garlic and red Chile paste
1/2 cup hot water
1 Tablespoons hot mustard

Directions:
Make special sauce by dissolving sugar in 1/2 cup water in small bowl. Add soy sauce, rice wine vinegar, katsup, lemon juice, and sesame oil. Mix well and refrigerate until ready to serve combine the hot water with the mustard and set aside also. Bring oil to high heat and fry chicken breasts 4-5 min per side until done. Remove from pan and cool. Keep oil in pan. As chicken cools mince water chestnuts and mushrooms to the size of peas. Prepare stir fry sauce by mixing brown sugar and rice wine vinegar, soy sauce, in a small bowl. When chicken is cool mince small as mushrooms and chestnuts. With pan on high heat add another Tablespoon oil, add chicken, garlic, onions water chestnuts and mushrooms to pan. Add stir fry sauce to pan and sauté mixture for a couple of minutes. Serve with lettuce cups, top with special sauce.
