3lbs pork neck bones (can use half rack of pork ribs, separated)
Onion, cut in large pieces
2 garlic cloves, minced (or garlic powder)
Sauerkraut
Barley, handful, optional
Water
Bay leaf
Salt & Pepper

Directions:
Directions:
Brown neck bones or rib sections in butter or oil large pot. Add onions, salt, pepper, garlic, and bay leaf. Cover all with water and bring to boil. Cover and reduce heat to low. Simmer for 1 hour. If using ribs, remove meat from bones. Add meat back into pot with sauerkraut and barley (optional). May need more water? Cook 1½-2 hours, stirring occasionally. This can simmer all day.
Serve with mashed potatoes.
