Double or triple recipe

- 1 c softened butter (2 sticks)
- 1/2 c sugar
- 2 tsp. vanilla
- 2 c flour
- 1/2 tsp. salt
- 2 c finely chopped pecans
- confectioners sugar for rolling cookies in

Directions:
Directions:
1. Preheat oven 325 degrees (don't grease pan)
Use Kitchen Aide:
2. Cream: butter, Then add sugar and vanilla, beat well.
3. Slowly add flour and salt, blend
4. Take bowl off Kitchen Aide - pour in pecans and stir by hand
5. Shape into balls (approx. 2 tsp.)
6. Bake for 20 minutes
7. Cool completely
8. Roll into a bowl of confectioners sugar
9. Keep in air-tight container; separate layers with wax paper
