- 1 1/2 c creamy peanut butter
- 1/2 c butter @ room temperature
- 1 tsp. vanilla extract
- 1 - 16 oz. box of confectioners sugar (or half of two lb bag)
- 1 - 6 oz. pkg. of milk choc chips
- 2 Tbsp. shortening (I use coconut oil)

- Line baking sheets with wax paper
- In a large bowl, mix peanut butter, butter, vanilla, and sugar with your hands to form smooth dough.
(Mixture will be very stiff)
- Shape into balls (approx. 2 tsp. each)
- Place on wax paper and put in refrig. or cool garage
- Mix chocolate - In microwave safe small bowl, put 1/2 bag of choc chips and 1 tsp of coconut oil. Microwave
for 30 seconds, stir. Repeat, stir until chunks disappear. (If you're having trouble getting smooth melted
chocolate, use power level 5 using microwave)
- Use a spoon or wooden toothpick to roll balls into the choc to cover. Return to wax paper and refrig or put in
cool place so chocolate sets.
- Store in air tight container - layer with wax paper and store in a cool place.
