8 Northern Spy apples (can use a mixture of apples, a little on softer side)
1/4 cup Swerve Brown sugar
1/8 cup Monk Fruit
2 tsp. cinnamon
Dash of salt (1/4 tsp.)

(None of the ingredients are exact, I've never measured)

Directions:
Directions:
1. Peel skin.
2. Cut apple in quarters.
3. Using a paring knife, slice apples into paper thin slices.
4. Put just enough water to cover the bottom of a medium sized pot (approx. 1/2 cup)
5. Pour in super thin slices of apples and cover.
6. On medium heat, let the apples soften with the lid on. When you hear/see it comes to a boil, turn the heat down to med/low. Try not to take the top off because the steam will release.
7. After approx. 20 minutes, lift the lid and see if the apples are soft enough to mash. If not, place lid back for 5 more minutes or so.
8. When the apples have thoroughly softened, use a potato masher to break the apples down to 'chunky' texture.
9. Add salt, cinnamon, brown swerve, and monk fruit. Stir and let simmer on low heat for 20 minutes or so.
10. You'll have to try it to see if you need more of the sugar substitute, but the hotter it is, the less you'll be able to tell.

This is my mom's recipe, which is why I have no idea how much I use of any of the ingredients. I tweeked this recipe using sugar substitutes to make it low carb, and it is delicious!
