1 tsp olive oil
1 tsp butter
1/2 onion, thinly sliced
1 garlic clove, chopped
1/2 cup white wine
1 tsp chicken bouillon
1/2 can chopped tomatoes with juice
4 large mushrooms, sliced
6 oz leftover pork tenderloin

Directions:
Directions:
In a heavy sauce pan, saute onion, garlie and mushrooms in oil and butter until softened. Add wine, chicken bouillon and tomatoes and bring to a boil. Cook uncovered at a low boil for about 10 minutes. Add more wine or water is sauce is too thick. Slice tenderloin into 1/2" slices and place in sauce and flip them so that sauce in on top and bottom. Cover pan and cook until is heated through, which should take 3-4 minutes. Serve over wild rice.

I made this when I had leftover pork and it was quick, easy and tasted really good! You could also use leftover turkey or chicken with great results!
