8 oz. Linguine, cooked
1 med. zucchini, sliced
1 med. onion, chopped
2 med. tomatoes, pealed, seeded and chopped
1/4 cup fresh parsley
1 T Olive Oil
2 Lg. Garlic Cloves
1 tsp. dried basil
1 tsp. dried oregano
1/8 tsp. salt and pepper
1/4 cup Parmesan Cheese, grated

Cook pasta according to package. Keep warm. Heat Olive Oil in Stir Fry Skillet. Press garlic into skillet. Stir Fry 15 seconds, add onions and zucchini. Stir Fry 2 to 3 minutes until crisp and tender. Add tomatoes, parsley, and seasonings, to skillet. Gently stir 1 to 2 minutes till all combined. Remove from heat and stir in warm pasta and Parmesan cheese. Serve immediately.
