2 1/2 lbs port tenderloin
1/2 c olive oil
2 tsp Dijon mustard
1 1/2 T honey
3 T soy sauce
1 tsp lemon zest
2 tsp lemon juice
1 T parsley leaves, chopped
1 T thyme
1 tsp salt
1/2 tsp pepper
2 tsp minced garlic

Place port tenderloin in a bowl or resealable gallon sized bag. In a medium size bowl, whisk together the olive oil, honey, Dijon mustard, soy sauce, lemon zest, lemon juice, parsley, thyme, salt, pepper and garlic. Pour the marinade over the meat. Marinate for at least 1 hour, or up to 8 hours. Prehead grill to medium heat. Place the pork on the grill and cook for 15-18 minutes, turning occasionally, until the interior of the pork registers 145 degrees. Let meat rest for 5 minutes.

This marinade is truly the best! We made the tenderloin with it and the flavor is outstanding---probably would be good on chicken as well!
