Banana Cream/Toffee Crepes Recipe

16 Crepe shells
3 cups Heavy cream
1 pkg Vanilla Pudding Mix
8 Bananas

Toffee Sauce*

Directions:
Make vanilla pudding (Follow directions on packaged Vanilla Pudding Mix). Place pudding in glass bowl, cover with plastic wrap and allow to chill completely. Fold 1 ½ cups of whipped heavy cream into the pudding mix. Peel and slice (about ¼” slices) bananas and fold into pudding mix. Place about ½ cup of mixture in the center of crepe shells and fold two sides to the center overlapping, forming a roll. Serve two crepes on plate, drizzle toffee sauce on crepes with a dollop of whipped cream on top.

*Toffee Sauce:

1 ½ cups Sugar
1 can Evaporated Milk (5.75 oz)
¼ cup Butter
¼ cup Light corn syrup
4 ½ oz English toffee (Heath Bars) , crushed

In a saucepan, combine sugar, butter, corn syrup and crushed toffee and heat (low heat) until toffee pieces are melted. Stir in evaporated milk and continue to cook for approximately 5-6 minutes. Keep refrigerated, reheat in microwave before serving.
