1 cup onions, diced
2 cups celery, diced
3 cups carrots, diced
2 cups zucchini, diced
1 cup summer squash, diced
1 cup green beans
2 cups broccoli, chopped
1 cup cabbage, shredded
3 cups diced tomatoes, canned
2 quarts vegetable stock
1 tsp. ground pepper
1 tbsp. dried basil
1 tbsp. dried oregano
2-3 bay leaves
non-stick cooking spray

Directions:
Directions:
In a large pan sprayed with non-stick spray, sauté onions, carrots and celery.

Add remaining ingredients and simmer 30 to 45 minutes.

Cool.

Drain vegetables from liquid. Remove bay leaves.

Measure individual portions of vegetable allotment and one cup broth.
