- 2 lbs cauliflower florets (2 small heads)
- 8 oz. shredded sharp cheddar cheese
- 8 oz. shredded Jalapeno Monterey Jack Cheese
- 8 oz. blocked cream cheese, softened
- 4 Tbsp + heavy cream
- 1 bunch green onions (1 cup)
- 6+ slices of bacon, cooked and crumbled
- 1 lg clove garlic, minced

Directions:

1. Preheat oven to 350 degrees
2. Steam florets until tender, approx. 5 minutes
3. Cream 6 oz. of each cheese, the softened cream cheese, and heavy cream with hand mixer or by hand
4. Stir in cliced green onions, chopped bacon and garlic
5. Set aside.
6. Drain any liquid from steamed cauliflower and add to cheese mixture.
7. Stir cauliflower with potato masher if you want smaller pieces
8. Pour into a 3 quart casserole dish
9. Sprinkle with remaining cheese
10. Bake (covered) until well heated (if put in oven cold, approx. 1 hour)
