2 pre-made pie crusts at room temperature
3 c rotisserie chicken, skin and bones removed, and meat cut into 1 inch cubes
1 c frozen vegetables, thawed
1/4 tsp thyme
Salt and pepper to taste

CREAM SAUCE
4T butter
3T flour
1 1/2 c milk or chicken broth
1 chicken bouillon cube

Preheat oven to 425º F
1. Bake the bottom crust in a 10 inch pie pan for 6 mins and remove from oven. Reduce temperature to 400º F.
2. Fill the pie crust with chicken and vegetables. Sprinkle with thyme, add salt and pepper to taste.
CREAM SAUCE
3. Melt butter in a sauce pan over medium heat. Stir in flour and cook 1to 2 mins until mixture begins to brown.
4. Add milk or chicken broth stirring constantly until it begins to thicken, about 4 or 5 mins.
5. Add bouillon cube and stir until dissolved.

6. Pour the cream sauce over the pie filling. Add the top crust and pinch to seal. Cut 5 slits in the top crust to create a star-like pattern.
7. Bake for 30 to 40 mins, until bubbly.
