⅔ c flour
¼ tsp each salt and baking soda
2 egg whites
1 whole egg
⅓ c sugar
3 tbsp soft unsalted butter
1 tsp lemon juice
½ tsp vanilla

Directions:
Directions:
Stir together flour, salt and baking soda; set aside. In a bowl, beat egg whites,whole egg and sugar until very light. Stir in butter, lemon juice and vanilla. Stir in flour mixture. Preheat waffle maker according to manufacturer's directions. Pour scant ¼ c batter onto center of bottom plate, snap handles shut and bake for about 30 seconds or until brown. Lift from baking plate by sliding spatula under one edge. Close machine while you shape one. When waffle has cooled enough to handle, but is still warm and pliable, hold in flattened palms of both hands and bring edges together so that one edge generously over laps the other. Press bottom half gently to form cone shape. Lay seam-side down on surface. Makes about 5 cones plus one little one. If the cover resists opening, wait for a few seconds more before trying again.

These are surprisingly easy to make and will keep for a few days, but are at their crispiest best if made fresh.
