1 dz raw, peeled, and deveined shrim
2T butter
1 clove garlic, minced
1 med size zucchini, chopped
1/2 c frozen peas
1/2 c sundried tomatoes, chopped
2T tomato paste or marinara sauce

1/2 c heavy cream
1/2 lb short pasta (like fusilli)

1 c breadcrumbs
2T butter
2T grated Parmesan cheese
2T chopped Italian parsley

Directions:
Directions:
1. Saute' the shrimp in a casserole or Dutch oven at low heat in half the butter, careful to not overcook. Remove shrimp, reserve and keep warm.
2. Saute' the garlic in the rest of the butter. Add the zucchini, peas, sundried tomatoes and a little tomato sauce to the pan. Cook for a couple of minutes, stirring frequently.
3. In the meantime, cook the fusilli until al dente, drain and put back in the pot to keep warm.
4. Prepare the breadcrumb topping by tossing the breadcrumbs in the butter until toasty but not burnt. Turn off the heat and mix in the grated cheese and chopped parsley.
5. Add the shrimp back to the pan of vegetables, and slowly stir in the heavy cream as it all re-heats. Add this mixture to the pot of pasta, mix thoroughly and then pour it into a round souffle' dish. Sprinkle the breadcrumb mixture over it evenly and put it in a warm oven until ready to serve.
