**Like Martha Stewart's Giant Meatballs, tweeked to make it low carb
1 lb. 80% ground hamburg (organic)
1 lb. ground veal
1 lb. ground pork
1/2 - 3/4 c ground plain pork rinds (use food processor)
1 c grated parm cheese
1 1/2 c ricotta cheese
1/2 c fresh chopped parsley
1 tsp oregano
1 tsp pepper
1/2 tsp red pepper flakes
1 tsp salt
1 lg egg, lightly beaten

**options: Sometimes I chop a small onion really small and saute with a clove of garlic mined

Directions:
Directions:
- Start with meat right out of the refrigerator. Combine with hands until well mixed
- Add all ingredients placing beaten egg on top of mixture
- Mix well with clean hands
- Roll into balls (pat into place vs roll) - size of your choice
- Bake 350 degrees for 15 min.
- Finish off in fry pan (make sure olive oil is hot before dropping in) to receive desired crispiness/cooked through

I throw these into my freshly made sauce and simmer for hours. Don't worry about the grease!
