1 lb Pork sausage links, par boiled 10-15 min
2 tbsp olive oil
2 cups thinly sliced onions
1 clove garlic, minced
1 yellow bell pepper, seeded, sliced
1 red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 cup seeded, chopped tomatoes
2 tbsp dry sherry
1 tbsp chopped fresh flat leaf parsley
1 tbsp chopped fresh basil
½ tsp salt
½ tsp black pepper

Directions:
Directions:
Warm oil in skillet. Add par cooked sausage and brown on all sides. Remove from skillet and keep warm. Add remaining oil and add onion; cook for 10-12 min or until very tender and lightly browned. Add garlic; cook for 1 min or until fragrant. Stir in bell peppers; cook for 10 min. Add tomatoes and cook for 10 min or until peppers are tender and sauce thickens. Add sherry, parsley, basil, salt, pepper and the sausage links. Stir until combined and links are hot.
Serve with mashed potatoes.
