1 beef rib roast ( 6-8 lbs) chine bone removed
4 cloves garlic, minced
2 tbsp minced fresh parsley
1 tbsp dried thyme
1 tbsp vegetable oil
2 tsp cracked black pepper
For Creamy Horseradish and Chive Sauce
1 cup sour cream
¼ cup prepared horseradish
2 tbsp milk
1 tbsp minced fresh chives
¼ tsp ground white pepper

Preheat oven to 350º. Make horseradish sauce; mix all ingredients in small bowl. Cover and refrigerate for several hours or overnight. Place roast fat side up in shallow roasting pan. Combine remaining ingredients except sauce ingredients in small bowl. Press into surface of meat. Roast in preheated oven for 2¼-2½ hours or until meat thermometer inserted in center, registers 150º for medium or 160º for well. Cover and let rest 15 min. Slice and serve with horseradish sauce.
