½ c. + 2 tbsp. butter
2 large onions, minced
2 cloves garlic, minced
2½ c. brown rice
½ tsp. cinnamon
Salt and pepper to taste
5-6 c. chicken broth
¾ c. raisins
5 tbsp. chopped toasted almonds

Directions:
Directions:
In 6 tablespoons butter, saute onions and garlic until soft. Stir in rice and cook 5-­6 minutes. Add cinnamon, salt and pepper and enough chicken broth to cover rice. Refrigerate or freeze, if desired. To serve, return to room temperature, cover and simmer for 45­-60­ minutes, until rice is tender and liquid has been absorbed. Stir in remaining butter, raisins and almonds. Heat and serve.
