4 c + 2 T chicken broth
½ t grated fresh ginger
1 T soy sauce
1 T cornstarch
2 eggs, slightly beaten
2 green onions, chopped
Salt and pepper to taste.

Directions:
Directions:
Bring soup stock, grated ginger and soy sauce to a boil. In a small cup, combine cornstarch and the 2 T of chicken stock to make a slurry. Slowly pour into the stock while continuing to stir. Cook until thickened. Reduce heat to a simmer. Pour the beaten eggs into the soup while continuing to stir in the same direction. The egg will cook and spread and feather out. Turn off heat and add the chopped green onions. Season with salt and pepper. Serve immediately.
