1 T olive oil
˝ medium onion, diced
1 clove garlic
1 medium bell pepper, diced
4 c diced ripe tomatoes
2 T tomato paste
1 t chili powder
1 t cumin
1 t paprika
Pinch of cayenne( or more to taste)
Pinch of sugar
Salt and pepper, to taste
5-6 eggs
˝ T chopped fresh parsley

Directions:
Heat olive oil in skillet on medium heat. Add chopped onions and sauté for a few minutes until they begin to soften. Add garlic and cook until mixture is fragrant. Add pepper and sauté for additional 5-7 minutes on medium heat until softened. Add tomatoes and tomato paste and stir to blend. Add spices and sugar and stir well. Allow to simmer for 5-7 minutes. Taste and adjust spices to your taste at this point. Crack eggs one at a time over mixture and space evenly, one in the center and the rest spaced around the outer edge. The eggs will cook “over easy” style on the top of the sauce. Cover and allow the mixture to simmer for 10-15 minutes, or until the eggs are cooked to your preference and the sauce is reduced slightly. Watch closely so it does not burn. If you want a thicker sauce, allow to simmer longer before adding eggs. Garnish with fresh chopped parsley before serving.
