2 medium eggs, raw, at room temperature
1 tbsp. or so of water
¼ tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. pumpkin pie spice
6 ounces apple, roughly chopped
non-stick cooking spray

Directions:
Directions:
Whisk together eggs, water, and the spices.

Prepare a pan with non-stick cooking spray and heat to medium-high. Pour mixture into pan and cook as you would any omelette. When eggs are half way done, add apples. Cover pan and cook until juice from apples has evaporated and fruit is caramelized. Cook uncovered another minute or two.

Turn onto serving plate.
