1 ¾ # raw shrimp, peeled and deveined
2 T + 1 t salt
½ t baking soda
6 T fresh lime juice, divided
1 c diced onions
¾ c tomato purée
½ c ketchup
3 T chopped cilantro
2 T fresh juice from 1 orange
1 jalapeño or Serrano pepper, finely diced
Diced avocado for garnish
Saltines for serving
Mexican hot sauce for serving

Directions:
In large bowl, toss shrimp with 1 t salt and baking soda and refrigerate 15 minutes. In medium bowl combine 4 T lime juice, onions, tomato purée, ketchup, cilantro, orange juice and jalapeño. In med saucepan combine 2 quarts cold water, 2 T salt and 2 T lime juice with the shrimp and heat over medium-high heat until instant read thermometer reads 170º. Drain, rinse under cold water and drain again. Cut into ½ inch pieces. Add to bowl with sauce and toss to coat. Top with avocado and serve immediately with saltines and hot sauce. If using precooked shrimp, rinse and drain well before tossing with sauce just before serving.
