milk or cream
salt and pepper

Directions:
1. Don't be scared of making sauces. Melt butter, add flour in equal parts, usually about 2-4 TBS depending on how much you are making. Let it brown, stirring to keep out the lumps. This is a rue.
2. Add milk slowly, stirring constantly. You don't want it to boil, or at least only let it barely boil. Simmer until it thickens.
3. Add salt and pepper to taste. This makes a gravy.
4. Add cheese and now you have a sauce. You can use a hard white cheese for an Italian sauce like Alfredo.
5. Add cheddar and you have a good yellow sauce for macaroni or over rice. Think broccoli rice casserole, mac and cheese, or even a Mexican casserole if you add Mexican spices, beef, and rice.
6. If it gets too thick, add more milk or cream. You can also add a little broth.

It took me years to figure this out. Hopefully you will practice a few times and learn long before you are over 30. I thought making a white gravy was hard until I figured out it is just a rue with milk.
