4 large peppers (1 red, 1 yellow and 2 green)
1 large white onion
½ cup olive oil
3 lbs. Italian sausage in one long link
1 cup cream sherry wine
1 pinch salt
1 pinch pepper
3 pinches oregano
4 pinches brown sugar

Directions:
Preheat oven to 325ºF. Wash the peppers, remove cores and seeds and cut them into quarter sections. Peel skin from onion and slice into quarter sections. In an extra-large skillet heat the olive oil on medium. Sauté the peppers and onion about 3 to 4 minutes or until onions are browning. Remove from oil with a slotted spoon. Set aside. In the same oil, place the sausage link and brown sausage for 3 to 4 minutes on each side, or until the sausage is a medium brown. In a large baking pan first place the sausage and oil. Pour the cream sherry over the sausage and sprinkle top with the salt, pepper and oregano. Seal the pan airtight with foil. Bake for 30 minutes. Carefully open foil top away from you. Let steam out. Add in the sautéed peppers and onions over the sausage. Sprinkle all the brown sugar evenly over the entire top of the peppers and onions. Reseal foil on pan airtight. Bake the sausage for 30 more minutes. To finish, turn off heat. Let pan sit sealed in the oven for 15 minutes to allow sauce and flavors to settle nicely into the sausage, peppers and onions. Cut sausage into pieces and serve.
