8 oz fettuccine noodles
3 T olive oil
1 small onion, diced
1 clove garlic, minced
⅓ c crunchy peanut butter
⅓ c soy sauce
¼ c sugar
¼ c brown sugar
Hot sauce, to taste
Lemon or lime wedges for garnish

Cook noodles in boiling salt water until al dente and drain. In large frying pan, heat 2 T olive oil over medium high heat. Add cooked noodle. Fry noodle stirring occasionally to make sure they don’t burn. Your goal is to add some texture and a little browning as you fry them for about 10-20 minutes. In small fry pan heat 1 T oil and cook onions until translucent. Add garlic and cook about 2 minutes. Whisk together remaining ingredients in small bowl and add to onion and garlic. Stir to combine. Add the sauce to the noodles and stir fry for an additional 10 minutes, watching closely to insure you don’t burn the noodles and sauce. Serve with grilled chicken and steamed vegetables.
