1/2 lb butter
1/2 cup onion diced
1 1/2 cups flour
2 cups shredded carrots and celery
4 cups water
8 cups chicken broth
8 cups milk
2 lbs american cheese

Directions:
Directions:
Cook butter and onion till soft, add flour to make a roux. Add all other ingredients but cheese. Simmer for an hour till carrots and celery soft and thickens. Add cheese and serve once fully melted and blended.

My Mom made up with soup and served it at her restaurant, The name came from the richness of the soup.
