6 hard boiled eggs
2 eggs
1 # pork sausage
1 t ground sage
2 T fresh parsley chopped-or 1 T dry
1 T milk
1 c flour
4 c panko bread crumbs
Oil for frying
English mustard for serving

Directions:
Directions:
In bowl combine sausage and sage and parsley until blended completely. Divide into 6 portions. In separate bowl beat raw eggs and milk and set aside. Put flour in shallow pan and panko crumbs in another shallow pan. Peel hard boiled eggs. Roll egg in flour to coat and remove loose flour. Take 1 portion of sausage mixture and flatten and carefully cover egg. Roll in flour again and then in egg wash. Roll in panko crumbs. Roll again in egg wash and panko crumbs a second time. Set aside until all are coated. They will be tennis sized balls. Heat 2 inches of oil to 350º. Gently lower only 1-2 eggs at a time into oil and fry about 7 minutes or until outside is golden brown and sausage is cooked. Drain on paper towel. Allow to cool for at least 10 minutes before serving.
