1 cup whole milk
1 pkg (2¼ tsp) active dry yeast
2 tbsp honey
2¾ cups all-purpose flour
1½ tsp kosher salt
6 tbsp unsalted butter, room temp
oil for the bowl and pan

Directions:
Directions:
Heat milk in microwave until 110º (1 min). Stir in yeast and honey and let sit until frothy, about 10 min.

Whisk together flour and salt. Make well in center and add milk mixture and 3 tbsp butter. Using a wooden spoon, gently stir just until incorporated (it will look shaggy).

Put on lightly-floured surface and knead 1-2 min. Put in oiled large bowl. Cover with plastic wrap. Sit in a warm place and let rise until size doubles (45+ min). Oil 8-9" square metal baking pan.

Melt 3 tbsp butter. Divide dough in half. Cover half. Roll other half into 4 x 12" rectangle. Brush dough with 1 tbsp butter. Cut into 8 1½" strips. Fold over. Arrange in oiled pan. Repeat with other half of dough.

Cover with plastic wrap and let rise again until doubled in size (30 min).

Bake 350º until puffed and light brown (28-30 min). Brush with 1 tbsp butter.
