4 large heads garlic or 10 oz (1 ¾ c) peeled garlic
2 c fruity olive oil
1 t salt
½ c fresh lime juice

Directions:
Directions:
Break garlic heads apart and and mash each clove with the flat of a large knife to remove the paper skin. if using cleaned garlic, put in plastic bag and use rolling pin to crush slightly. Stir garlic, oil and salt together in a 8 inch square glass pan. make sure garlic is submerged in oil and bake at 325º for 45-55 minutes, until garlic is soft and lightly browned. Stir in lime juice and bake an additional 20 minutes for the garlic to absorb the lime and turn golden brown. Mash with a fork or potato masher into a coarse puree. Store in refrigerator in a wide mouth container. It will keep for 3 months as long as there is enough oil to keep the garlic covered.
