1/2 c. milk, divided
1/2 c. heavy cream
2 Tbsp. butter, unsalted
1½ Tbsp. sugar
2 Tbsp. flour
1 tsp. salt
5 c. frozen corn (half yellow, half white is pretty), thawed/drained
2 lg eggs, beaten
1/2 c. shredded Asiago cheese
Chives, chopped/for garnish

Directions:
Preheat oven to 400º, rack in middle. Lightly spray 2qt baking dish. In medium saucepan over medium heat, add in cream, 1/4 c. milk, sugar, and butter. Bring to boil. While mixture is heating up, make slurry of flour and remaining 1/4 c. milk, whisking together. Once milk comes to boil, add in flour slurry, whisk until thickened slightly, approx. 30 seconds to 1 min. Remove from heat, add in corn and salt. Mix. Slowly add in the eggs while mixing entire time, don't want to curdle eggs. Pour mixture into prepared baking dish. Bake for 30 min or until top is puffy and golden brown OR if using the cheese, remove after 25 min of baking, sprinkle cheese on top and bake for remaining 5 min. Remove from oven and cool for 10-15 min before serving so it can firm up and set. Garnish with chives.
