16 ounces firm tofu, drained and crumbled
1 medium onion, chopped
1 clove garlic, minced
1 green pepper, diced
2 medium potatoes, cooked, peeled and diced
1 tbsp. soy sauce
non-stick cooking spray

Directions:
Directions:
Spray a frying pan with the cooking spray. Sauté onion, garlic and pepper until soft. Add tofu, stirring until heated through. Remove from heat and mix in soy sauce.

Measure starch portion from potatoes into serving dish, reheating in microwave if necessary. Top potatoes with measured protein portion from tofu mixture.
