3 egg yolks
1 whole egg
1/2 tsp. salt
1/4 c. powdered sugar
1 tsp. vanilla
1 c. flour, more if needed
Canola or vegetable oil for frying

Directions:
Directions:
Heat oil in deep fryer to 375 (or 2 inches oil in deep skillet/Dutch oven). Beat egg yolks, egg, and salt until very stiff, about 10 min. Blend in sugar & vanilla. Add flour all at once. Knead on well floured board until surface is blistered in appearance, about 7 min. Divide dough in half. Roll out very thin. Cut dough into 4"x 2" diamond shapes. Make 1"slit in center of each. Draw long point of diamond through slit. Fry about 30 seconds. Drain on paper (can use grocery bags). Sprinkle with powdered sugar.
